
Swedish Meatballs Stuffed Sweet Potatoes

Savory Swedish meatballs piled into tender baked sweet potatoes and topped with crispy bacon and
fresh parsley.

2 Tablespoons Parsley, chopped
2 Tablespoons Bacon, cooked and chopped

Instructions
1. Follow cooking instructions to cook Beehive Meals Swedish Meatballs.
2. Bake potatoes in oven (400 degrees) for 45 minutes to 1 hour until fork tender.
3. Remove from oven and let cool slightly so you can touch it. Roll gently on a table top then split in half.
4. Scoop half of the potato out then fill with meatballs cut in half.
5. Slightly whip the removed portion of potato with a fork then place over the meatballs.
6. Top all with creamy slow cooker sauce.
7. Add chopped parsley and bacon to garnish.
